Gluten-Free Rigatoni Mediterranean

Taking a break from the recipe makeovers…
My brother was in town last week. He was diagnosed with celiac disease a little over a year ago, something that has had a fairly significant impact on my cooking. For holidays and visits, I’ve had to re-envision old favorites like chocolate cake, fried chicken and pasta without gluten. [...]

Meat loaf without the meat

Thursday, July 12th, 2007

Yves Good Ground is the best vegetarian ground beef substitute I’ve found. I’m not a huge fan of ground beef to begin with, so my tastes are a little biased. People who are hardcore carnivores may find this a little alien-tasting. Lean ground round or ground turkey can be substituted for the veggie ground, though [...]

Would you like fries with that?

Thursday, July 5th, 2007

You can have a burger without fries… but it’s not nearly as much fun. I’m a huge fan of Burgerville’s Sweet Potato Fries, but I think I might actually like these better. Not only do they pair well with turkey burgers, they’re delicious with roasted chicken or a pork tenderloin, too.

Yes, *that* US Weekly

Tuesday, July 3rd, 2007

Confession time: I got this idea from an US Weekly interview with Jessica Simpson’s personal trainer. It’s an easy trick and shaves around 100 calories off a typical burger. Ready for it?
Only eat half the bun.
It’s brilliant. I love open-face sandwiches: hot browns, turkey, cranberry and mashed potato, chicken a la king. So why not [...]

Give a cheer for the girls who drink the beer, in the cellars of good ol’ Chi-O

Wednesday, June 27th, 2007

Here’s another one from my college days…
Back in college, we were jealous of the girls from the Gamma Phi Beta house. Our jealousy didn’t have anything to do with who won the Homecoming carnival or who was pinned to which dreamy Sig Ep — it had everything to do with Oprah Winfrey.
See, everything prepared by [...]

“She is crying out for a makeover”

Wednesday, June 27th, 2007

When I was in college, I discovered California Pizza Kitchen. The restaurant had been around for quite awhile at that point, but I (being the sort of person perpetually trying to drop five pounds for sports) never saw the inside of one until college. The pizza was decent, but it was the Chicken Tequila Fettuccine [...]

Hot Cereal with Blueberries and Toasted Almonds

Wednesday, June 20th, 2007

Breakfast is serious business: skipping it can cause your metabolism to temporarily drop 25%. But eating breakfast doesn’t mean you have to slave over something uber-complicated before you’ve even had your coffee. Pop this in the microwave and go:

Mama said there’d be days like this.

Tuesday, June 12th, 2007

There are days, I admit, when the idea of going any farther than the pantry for food sounds horrible. As awesome as it is to make fresh, whole food from scratch, sometimes you just want to pop something in the microwave and hide under a blanket on the couch until it’s done. This recipe is [...]

Buckwheat-Banana Pancakes with Pomegranate Syrup

Friday, June 8th, 2007

You hardly need any refined sugar in these pancakes. The banana in the batter adds natural sweetness, and the maple syrup and pomegranate juice in the syrup seal the deal (and add antioxidants!)
