Enchilada Sauce

Ingredients:

  • 1 15 oz can of pureed tomatoes
  • 3 tbs all purpose flour
  • 3 tbs olive oil
  • 1tbs chili powder (or more if you like it spicy)
  • 1 tsp ground cumin
  • 1tsp dried oregano
  • Salt to taste
  • 1/4 cup onion, finely chopped
  • 1-3 garlic cloves, finely chopped
  • 2 cups water or chicken stock

Instructions

Heat the olive oil in a skillet or wide sauce pan. Whisk in the flour and chili powder, stirring constantly let this mixture cook until the flour has slightly browned. Add cumin and oregano and salt.

Add onions and garlic and cook until the onions are translucent.

Carefully pour in the tomato puree and stir. Add two cups of water, stir to blend.

Let the mixture simmer for a few minutes until thickened.

Sauce may be pureed in a blender or food processor for a smoother texture.
