Summer Shrimp Salad

It’s hot outside. Keep your kitchen cool by making a nice salad.

Ingredients

  • 1 cup cooked shrimp (salad size — 80/100s)
  • 1/4 cup chopped fresh parsley
  • Capers, to taste
  • 1 Tb Mayonaisse
  • Juice of one lime
  • Salt, Pepper, Red pepper flake, all to taste

If your shrimp are frozen, you can thaw them in about 10 minutes by placing them in a bowl of cold water, and placing this bowl under a trickle of cold water in the sink.

Drain and dry your shrimp, then toss with the rest of the ingredients.

I served mine with a few chunks of bread, a caprese salad on the side (tomatoes, mozzarella, basil, olive oil, balsalmic vinegar, salt), and a nice white wine.
