Quick and Easy Three Bean Salad with Tofu
With the weather getting warm, it’s nice to have quick and easy food that doesn’t turn your kitchen into a sweltering hot box.
Enter the salad.
Ingredients
- 1 15oz can of black beans
- 1 15oz can of red kidney beans
- 1 15oz can of garbonzo beans
- 9oz of firm tofu (about half a package), chopped into little cubes
- Cherry tomatoes
- Green onions
- 2 or 3 garlic cloves finely minced
- Juice of one lemon
- Chopped cilantro to taste
- 1/2 tsp tumeric
- salt and pepper to taste
- Olive oil to taste
- Balsalmic vinegar to taste
Equipment
- Big bowl
- Spoon
Instructions
Rinse off the beans. Put everything into a bowl. Stir it up with a spoon. Chill in the fridge for a couple of hours.
Serve over mixed greens or in a slightly smaller bowl.
