Quick and Easy Three Bean Salad with Tofu

Three Bean Salad

With the weather getting warm, it’s nice to have quick and easy food that doesn’t turn your kitchen into a sweltering hot box.

Enter the salad.

Ingredients

  • 1 15oz can of black beans
  • 1 15oz can of red kidney beans
  • 1 15oz can of garbonzo beans
  • 9oz of firm tofu (about half a package), chopped into little cubes
  • Cherry tomatoes
  • Green onions
  • 2 or 3 garlic cloves finely minced
  • Juice of one lemon
  • Chopped cilantro to taste
  • 1/2 tsp tumeric
  • salt and pepper to taste
  • Olive oil to taste
  • Balsalmic vinegar to taste

Equipment

  • Big bowl
  • Spoon

Instructions

Rinse off the beans. Put everything into a bowl. Stir it up with a spoon. Chill in the fridge for a couple of hours.

Serve over mixed greens or in a slightly smaller bowl.
