Oven-Fried Chicken

1 cup low-fat buttermilk
1 1/2 cups all-purpose flour
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp ground thyme
1/4 tsp white pepper
3 lbs boneless, skinless chicken breast halves and thighs
Cooking spray
1 tablespoon butter, melted

Preheat oven to 400.

Place buttermilk in a shallow dish. Combine flour plus next 5 ingredients in another shallow dish. Dip chicken pieces in buttermilk, and dredge in flour. Dip and dredge each piece a second time.

Arrange chicken on a baking sheet coated with cooking spray. Drizzle melted butter over chicken. Bake at 400 for 30 minutes or until chicken is done.

Serves 6.
