Mashed Potatoes with White Gravy
Mashed Potatoes
4 cups cubed peeled baking potato (about 1 1/2 pounds)
1 garlic clove, sliced
3/4 cup 1% low-fat milk
2 tablespoons grated Parmesan cheese
1 tablespoon stick margarine or butter
1/2 teaspoon salt
1/8 teaspoon pepper
Place potato and garlic in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 25 minutes or until tender. Drain. Return potato to pan. Add milk and remaining ingredients; mash with a potato masher.
Serves 4. Serve with White Gravy (recipe below).

White Gravy
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup water
1 (12-ounce) can evaporated skimmed milk
1 (10 1/2-ounce) can low-salt chicken broth
Combine first 3 ingredients in a medium saucepan. Gradually add water, milk, and broth, stirring with a wire whisk until blended. Bring to a boil; reduce heat, and simmer 3 minutes or until thickened, stirring constantly with whisk.
Makes 3 cups.
