Chicken Salad with Oranges and Feta
2 1/2 tsp olive oil
3 boneless, skinless chicken breasts, cut into bite-sized chunks
1 clove garlic, minced
1 tsp dried mint
6 tbsp frozen orange juice concentrate, thawed
1/4 cup apple cider vinegar
2 tbsp Dijon mustard
Salt and pepper
12 cups baby spinach
2 oranges, peeled and sectioned
1/4 cup golden raisins
4 oz. (1/2 cup) crumbled feta cheese
Heat oil in a nonstick skillet over med-high heat. Add chicken and saute 2 minutes. Add garlic and mint; saute 2 minutes. Reduce heat to low, stir in orange juice concentrate, vinegar and mustard. Sprinkle with salt and pepper.
Place spinach in a large bowl with oranges and raisins. Spoon warm chicken mixture over salad and toss gently to mix. Top with crumbled feta.
