Holiday: Side Dish

This is my family’s dirty, little holiday secret. We all like to pretend that we have sophisticated palates, but this dish is our secret Thanksgiving-&-Christmas-only addiction. Seriously. Velveeta’s not even a real food…

Broccoli-Cheese Casserole

Ingredients:

2 lbs broccoli
1 lb Velveeta
1 stick butter
1 stack Ritz crackers - crushed

Cut broccoli into fairly small pieces. Bring to boil
and steam for about
three to five minutes. (It should just be tender when
you prick it with a
fork.) Drain immediately, wash in cold water to stop
any further cooking.
Drain again and dry each piece on paper towels. Line
broccoli in a 9 x 12
buttered baking pan. (or whatever size baking pan you
have.)

Cut Velveeta into several pieces. Cut 1/2 stick of
butter into pieces and
add to Velveeta in a bowl. Microwave one minute at a
time, stirring each
time until well mixed. It should take two or three
microwavings to do this.
(I think I microwave on high, but don’t overcook.)
Pour melted cheese
immediately over broccoli.

Cut other half of butter into several slices. Melt in
microwave ten seconds
at a time until melted. Add melted butter to crushed
Ritz crackers. Stir
and pour crumbs over casserole.

Bake uncovered in 350 degree oven for about 30
minutes.
