Healthy Breakfast!

It’s the most important meal of the day, after all. This is fast, easy and portable.

Egg, Sausage and Cheese “McMuffin”

1 poached egg (I use a microwave-safe egg poacher — $1.50 @ Wal-Mart and invaluable in the mornings)
1 vegetarian sausage patty (Morningstar Farms is my favorite)
1 whole wheat english muffin, toasted
1 oz. sharp cheddar cheese or soy cheddar

Poach the egg, toast the muffin, microwave the sausage patty. Put it all together on the muffin, top with cheese.
